Ok, so they aren't really that fancy but they kind of look like it! I was inspired by the Waffle Window which we visited a couple of weeks ago. I didn't get as gourmet as that place but it was exactly what I was craving. I love over easy eggs with toast, so I tried to create that taste on the waffle. I used Fiber One waffle mix and they turned out really fluffy and yummy, and then I added a couple of over easy eggs on top.
I served this with sausage and fresh squeezed orange juice from my new (ish) juicer. You can't beat fresh OJ.
Have you tried any different breakfasts lately? Or is this one not new for you?!
